  1. Primer lugar añadimos un poco de orégano, mucho perejil, pimienta negra molida, un poco de laurel en polvo y un puñado de sal. Añadimos 2 ajos y trozo de manzana cortados en pequeños trocitos para conseguir una mayor textura.
  2. Una vez echado las especias, añadiremos dos huevos y amasamo bien todos los ingredientes. Una vez la masa lista, añadiremos poco a poco pan rallado hasta dejarlo con una espesura al gusto y lo dejaremos reposar.
  3. Cortamos en pedacitos chicos las verduras y vamos realizando un sofrito hasta dejar todo doradito y bien pochado,
  4. Añadiremos 1/2 vaso vino blanco y una pastilla de avecrem para realzar el sabor y dejarlo a fuego lento
  5. Una vez el sofrito esté casi hecho, nos disponemos a realizar el molde de las albóndigas y posteriormente harinarlas haciendo una últimasacudida de la harina sobrante
  6. Una vez hecho este paso, procederemos a freírlas vuelta y vuelta para SELLAR la carne y retirarlas y quitarle el aceite sobrante.
  7. Una vez el sofrito realizado, lo batimos en la Thermomix o batidora hasta dejarlo líquido como si de una crema se tratase para posteriormente echarlo en la olla de agua (2 vasos y medio de agua y sus hojas de laurel).
  8. Una vez tenemos la salsa vertida, procederemos a poner las albóndigas dentro de la olla y a fuego lento- medio durante unos 20 minutos añadiremos el colorante y pimentón dulce para darle el último toque.
