-Poné en remojo las legumbres 12 hs antes.
-Herví durante 10 minutos los chorizos colorados y los de chancho. Reservalos en la heladera.
-Cortá en trozos de unos dos centímetros todas las carnes. Poné una olla con agua al fuego, cuando comience a hervir colocá todas las carnes juntas y dejá por 5 minutos. Escurrí y reservá en la heladera. - ¡A Cocinar!
Para el locro necesitás una olla grande (20 litros). Si no tenés, tratá de reducir proporcionalmente las cantidades y usá más de una olla de ser necesario. - Primero cortá la panceta en trozos medianos y colócala en la súper olla con un poquito de aceite de oliva.

(Así no tardás tanto tiempo y tenés menos chance de que se te pegue todo.) - Picá las cebollas, los morrones y las dos cabezas de las cebollas de verdeo (dejá la parte verde). Agregale a la panceta y salteá hasta que esté dorada la cebolla.
- Ahora colocá todas las carnes y cubrí con agua. Dejá hervir unos 45 minutos.
- Agregá las legumbres, todo el zapallo rallado o cortado bien finito para que se deshaga, las zanahorias picadas y los chorizos cortados del tamaño que te guste. Cociná por una hora, revolviendo cada tanto. Faltando 5 minutos agregale la lata de choclos.
Condimentá como te guste. - Picá las cebollas de verdeo (la parte verde larga que habías reservado). Saltéalas 5 minutos con un poquito de aceite de oliva. (Si te gusta el ajo podés agregarle, queda más fuerte.) Condimentá con morrón dulce o si te gusta con ají picante.
